Pulled Pork Loaded Potatoes




These are a BIG TIME fan favorite for me and my husband! I make the pulled pork in the crockpot during the day--takes 5 minutes! Then when we're ready to eat dinner I do the rest.

Pulled Pork:

In a crockpot, add a pork tenderloin, a bbq spice mix/rub of your choosing, a TINY bit of chicken broth just to coat the bottom, and a healthy squirt of bbq sauce on top (I like to use Sweet Baby Ray's no sugar added). Cook on high for about 4 hours, then shred the pork, add a BUNCH more bbq sauce and reduce to 'keep warm' until you're ready to eat!

When you're closer to dinner time, prep the potatoes: Slice them super thin and round like chips (I use russet or red potatoes) and cook them to crispy. I either air fry them at 375 for 20 minutes or bake in the oven for about 20 minutes at 400 degrees. Season with salt, pepper and garlic powder.

Now it's assembly time! Layer your potatoes on a baking sheet, pile on some of the pulled pork, and add veggies of your choice (we do sweet mini peppers, tomatoes and red onions finely chopped). Throw some cheese on top and broil on high for 5-7 minutes. Top with plain, non-fat greek yogurt (my sour cream swap) and DIG IN!
