Coach Jenny's Homemade Granola

Lately I have been getting back into the habit of something I used to do weekly. Making my own granola. Here is the base recipe that I use. Feel free to change up the combo of nuts and dried fruit:)
1 Cup almonds 1/3 cup coconut oil 1/3 cup brown sugar 1/4 cup honey 1/2tsp cinnamon 1/4tsp salt 1 tbsp vanilla 4 cups rolled oats (not instant oats) 1/2 cup dried cherries (added at the tail end of cooking time)
Heat oven to *350
Line a baking sheet with parchment paper
Chop nuts and mix with oats in a large bowl
Place coconut oil and honey in a small bowl and melt for :30 in the microwave
Add brown sugar, cinnamon, salt, and vanilla to oil and honey-mix well
Pour liquid over oat and nut mixture, combine.
Pour granola mixture onto the baking sheet and spread out evenly
Bake for 25-30 min
*Every 10 min give the granola a stir
During the last 10 min of cooking add the dried cherries
Bake until golden brown
Let granola cool completely. As it cools it hardens up.
