Our family has been doing Soup Sundays throughout the fall and so far this “Lasagna Soup” is in the lead for favorite. Instead of Italian sausage, we used ground chicken and added some Italian seasoning. If you want to make it gluten free, just use whatever noodles work for you. The Ricotta Cheese makes it a little creamy and the noodles make it nice and hearty.
If you make the meatballs ahead of time, you could whip this soup up quickly. However, I really enjoy taking my time and making a homemade meal on Sundays. It makes the winter days a little cozier.
