I shared an overnight oats recipe recently where I used a bunch of fresh berries to top it – yum!
Since I’ve been making these oats, I’m going through more berries but sometimes I can’t quite use them all up before they start to get a little wilty.
I know some of you throw those in the freezer and use them for smoothies and that’s a great tip! I’m not a regular smoothie maker so I decided to make a compote instead. I added about a tablespoon of water, a small squeeze (very specific amount here LOL!) of honey, juice from half a lemon, and a handful of blueberries and blackberries to a small saucepan. I boiled them for a few minutes, stirring frequently so they didn’t burn, then turned the heat down to low for about 10 minutes. It makes a delish topper for my oats but would also be yummy on pancakes or waffles. And I didn’t waste the fruit – yay! It’s hard to photograph the final product but I swear it’s super tasty!
