It’s a nutritious nutty flavored grain that’s a good source of fiber, protein, magnesium, zinc and B vitamins. I found a recipe several years ago on a bag of farro and have adapted it a bit.
It’s a delicious Mediterranean salad! It’s great served with fish or chicken or even equally delicious on its own. You can modify the proportions of these ingredients to suit your taste. Enjoy!
2-3 cups cooked farro
1 pint grape tomatoes
Red, yellow or orange pepper diced
1/4-1/2 Red onion diced
1/2 cup feta cheese (or more to taste)
1/4-1/2 cup Kalamata olives
Garnish with Fresh basil
Mix all ingredients together and then toss with your favorite vinaigrette.
